Blackberry Mojito Popsicles

Summer is so near so how about let’s eat your cocktail with this refreshing recipe for Blackberry Mojito Popsicles

So we may still be in quarantine, but that doesn’t mean you can’t live your life like a hot summer day sitting on the porch enjoying all the frosty treats. I have been missing cookouts with friends, going to get drinks with my girls, and just sitting outside enjoying a cone of ice cream. With summer near and the possibility of us having cookouts again you should definitely make these delicious popsicles. All your friends will be raving about them!

These Blackberry Mojito Popsicles have come to save Summer! It has 5 simple ingredients that will blow your mind. The liquor that I infused these with is white rum! I consulted my girl over at Blended Spirits to figure out the perfect combination and it worked out well. If you do not like blackberries please use your favorite fruit. You can substitute with whatever kind of fruit you prefer (strawberries, peaches, raspberries, blueberries, etc.)

It is super simple! All you have to do is blend, pour, freeze, and let the licking begin! I promise you will not be disappointed! I like fruity cocktails so mojito popsicles are right up my alley. Blackberry Mojito Popsicle

Ingredients:

  • 2 cups blackberries

  • 1 cup fresh mint leaves

  • 1/3 cup honey

  • 1/4 cup fresh lime juice

  • 1/3 cup white rum (a little more if you want)

Equipment:

  • popsicle molds; popsicle sticks

Instructions:

In a blender, combine the blackberries, mint, honey and lime juice and blend until puréed.

Strain the mixture through a fine-mesh sieve to remove the seeds then stir in the rum. ( I liked the seeds so I did not strain my mixture, but if you are not a fan please strain the mixture)

Pour the mixture into popsicle molds, insert sticks and freeze for a minimum of 4 hours or until frozen solid.
